The water-siphery is a caudate pepper that grows wildly on the island of Madagascar. Each berry is picked by hand from vines reaching up to 20 meters in height. Fruit, woody notes with citrus hues make this pepper an excellent choice for desserts made of chocolate, strawberry or pineapple. In a mix with other peppers, it goes well with red meat and game. It is best to add spice at the end, as long cooking can cause some bitterness.
